Moltén Dark Chocolaté Cakés

Ingrédients
- 7 ounces bittersweet chocolaté, chopped
- 8 tablespoons (1 stick) unsaltéd butter, cut into pieces
- 1/2 cup all-purposé flour
- Pinch of salt*
- 2 téaspoons of instant espresso powder
- 2 largé eggs
- 2 largé egg yolks
- 1/4 cup héavy cream
- 1 téaspoon vanilla extract
- 1/2* cup icing sugar
How to do it*
Stép 1
- Preheat the ovén to 450ºF. Butter 6 3/4 cup ramekins. Place the chocolate and butter in a saucepan over low heat and cook, stirring constantly with a flexible spatula, until it is melted and smooth. Remove from heat, pour into a bowl and let cool slightly.
2nd stép
- In a small bowl, combiné the flour, salt and espresso powder with a fork. In a large bowl, using a whisk, beat the eggs, yolks, cream and vanilla. Stir in icing sugar, until well combined. Stir the chocolate mixture into the egg mixture, then incorporate the flour mixture, just until it is combined (you shouldn't see any traces of flour, but try not to mix more than necessary) .
Stagé 3
- Usé a spoon to divide the chocolate mixture between the ramekins. Place the ramekins on a baking sheet and bake for 10 minutes. Remove and let stand for 1 minute. Pass a knife around the inside edge of each ramekin and turn the cakes over on plates. Serve hot, sprinkled with icing sugar, if desired.
