You’ll Need:

2 tbsp veggie lover margarine or oil
3 medium carrots finely diced
3 celery stalks cleaved
1 leek (white and light green part just) cut, or 1 diced onion
14 oz mushrooms (400g) cut
3 cloves garlic minced
1 tsp paprika powder discretionary
1 tsp dried oregano
1 tbsp crisp thyme
1 glass uncooked rice (175g) *read formula notes
ocean salt to taste
pepper to taste
2 tbsp universally handy flour *or sans gluten if necessary
1/2 glass white wine (120ml) discretionary
6 glasses vegetable juices (1440ml) or to wanted consistency
1 glass non-dairy milk (240ml) or cream for a creamier soup
4 tbsp Vegetarian parmesan cheddar or wholesome yeast pieces, discretionary
crisp parsley to decorate

How to Make:

  1. Warmth the oil in a substantial pot (or dutch stove), over medium-high warmth. 
  2. Include the carrots, celery, leek (or onions), and mushrooms and sauté for around 6-7 minutes, or until delicate, blending sporadically. 
  3. Include the garlic, paprika, oregano, and thyme and cook for an extra 1-2 minutes, blending every now and again, until fragrant. 
  4. Sprinkle the flour over the veggies and blend to join. (It'll get knotty yet that is typical). 
  5. Discretionary: Include the white wine and cook for a moment or something like that, blending as often as possible, until the wine has vanished. (The liquor will consume off yet the flavor makes the soup absolutely heavenly.) 
  6. Include the vegetable stock and rice, give it a decent blend.
